  1. Marinate the shrimp
    In a bowl, toss the shrimp with lime juice and 1/2 teaspoon turmeric. Cover and refrigerate for 15 minutes while preparing other ingredients.
  2. Prepare the base
    Heat coconut oil in a large, deep skillet over medium heat. Add onions and sauté until translucent, about 5-6 minutes. Add garlic, ginger, and green chilies, and cook for another 2 minutes until fragrant.
  3. Build the curry
    Add the Goan curry paste/powder and remaining turmeric to the skillet. Stir constantly for 1-2 minutes until aromatic. Add chopped tomatoes and cook until they begin to break down, about 3-4 minutes.
  4. Add liquids
    Pour in the coconut milk and 1/2 cup water. Add tamarind paste, curry leaves, and salt. Stir well to combine and bring to a gentle simmer. Let it cook for 5 minutes to develop flavors.
  5. Cook the shrimp
    Add the marinated shrimp to the simmering curry. Cook for 3-4 minutes, stirring occasionally, until the shrimp turn pink and opaque. Be careful not to overcook the shrimp as they will become tough.
  6. Adjust seasoning
    Taste the curry and adjust seasoning with additional salt or tamarind paste if needed. If the curry is too thick, add a splash of water. If too thin, simmer for a few more minutes to reduce.
  7. Serve
    Remove from heat and let stand for 2 minutes. Garnish with fresh cilantro leaves before serving. Serve hot with steamed basmati rice or crusty bread for soaking up the delicious curry sauce.
