  1. Prepare the shrimp
    Rinse the peeled and deveined shrimp under cold water. Pat dry with paper towels and set aside.
  2. Create the curry base
    Heat vegetable oil in a large pot over medium heat. Add the red curry paste and stir for 1-2 minutes until fragrant, being careful not to burn it.
  3. Add liquids
    Gradually stir in the coconut milk. Bring to a gentle simmer, then add fish sauce, palm sugar, kaffir lime leaves, and lemongrass. Stir until sugar is dissolved.
  4. Cook the vegetables
    Add the red bell pepper, bamboo shoots, and eggplant to the curry. Simmer for 5-7 minutes until vegetables begin to soften but still maintain some firmness.
  5. Add the shrimp
    Add the shrimp to the curry and cook for 3-4 minutes until they turn pink and are just cooked through. Be careful not to overcook the shrimp or they will become tough.
  6. Finish with aromatics
    Turn off the heat and stir in the lime juice and Thai basil leaves. The residual heat will wilt the basil while preserving its aromatic flavor.
  7. Serve
    Remove the lemongrass pieces and kaffir lime leaves. Ladle the curry into bowls over steamed jasmine rice. Garnish with fresh cilantro leaves and serve immediately.
