  1. Prepare the ginger
    Thoroughly rinse the ginger root under cool water to remove any dirt. Using a fine grater or microplane, grate 2 tablespoons of unpeeled ginger. The skin contains beneficial wild yeasts that will help with fermentation.
  2. Start the culture
    In a clean quart-sized glass jar, combine the grated ginger with 2 tablespoons of sugar and 2 cups of filtered water. Stir with a wooden spoon until the sugar dissolves. If using, add the lemon juice and raisins at this point.
  3. Cover and set
    Cover the jar with a piece of cheesecloth or coffee filter and secure with a rubber band. This allows the mixture to breathe while keeping out dust and insects. Place the jar in a warm spot in your kitchen, away from direct sunlight. Ideal temperature is between 70-75°F (21-24°C).
  4. Daily feeding
    Every day for the next 5-7 days, feed your ginger bug by adding 1 tablespoon of grated ginger and 1 tablespoon of sugar. Stir well with a wooden spoon. The mixture will gradually become cloudy and bubbly as fermentation occurs.
  5. Monitor for activity
    Your ginger bug is ready when it's actively bubbling and fizzing, and has a pleasant, slightly yeasty smell. This typically takes 5-7 days, depending on the temperature and environment. You should see bubbles forming on the surface and rising when you stir the mixture.
  6. Strain and use
    Once active, strain the liquid through a fine-mesh sieve to separate it from the ginger pieces. The strained liquid is your ginger bug starter, ready to use in homemade sodas and fermented beverages. Use about 1/4 cup of ginger bug per quart of beverage.
  7. Maintain your culture
    To keep your ginger bug alive, store the remaining ginger solids with some of the liquid in the refrigerator. Feed it weekly with 1 tablespoon each of sugar and grated ginger. Bring to room temperature 24 hours before using again.
