  1. Soak the grains
    Place the wheat berries (or grain of choice) in a large bowl. Cover with 2 cups of filtered water and let soak for 8-12 hours or overnight at room temperature.
  2. Rinse and drain
    After soaking, drain the grains through a fine mesh strainer and rinse thoroughly with fresh water. Return the grains to the bowl.
  3. Sprout the grains
    Cover the bowl with a damp cloth and place in a warm, dark area. Rinse and drain the grains 2-3 times per day until tiny sprouts appear, about 1-3 days depending on the grain and room temperature.
  4. Prepare for fermentation
    Once sprouted, transfer the grains to a clean glass jar. Add 4 cups of filtered water, making sure the grains are fully submerged. Cover the jar with cheesecloth or a breathable cloth and secure with a rubber band.
  5. Ferment the drink
    Place the jar in a warm spot (about 70-75°F/21-24°C) away from direct sunlight. Let ferment for 24-48 hours, until the liquid becomes cloudy with a slightly tart, lemony flavor. The warmer the temperature, the faster it will ferment.
  6. Strain and store
    Strain the liquid through a fine mesh strainer into clean glass bottles or jars, discarding the grains or saving them for a second batch. Refrigerate the Rejuvelac immediately to slow fermentation.
