  1. Prepare the whey
    If using yogurt whey, line a strainer with cheesecloth and place over a bowl. Add plain yogurt with live cultures and let strain in the refrigerator for 2-4 hours until you collect at least 1/4 cup of whey liquid.
  2. Mix the base ingredients
    In a 2-quart glass jar, combine filtered water, freshly squeezed lemon juice, honey or sugar, and lemon zest. Stir vigorously until the sweetener is completely dissolved. Add the sea salt and any optional flavor additions (ginger, mint, or chamomile).
  3. Add the culture
    Add the whey or water kefir grains to the lemonade mixture. The beneficial bacteria and yeasts in the culture will kickstart the fermentation process, creating natural carbonation and probiotic benefits.
  4. Ferment the lemonade
    Cover the jar with a coffee filter or clean cloth secured with a rubber band to allow airflow while keeping out dust and insects. Place in a warm spot (68-78°F) away from direct sunlight for 2-3 days. The warmer the location, the faster the fermentation will occur.
  5. Monitor the fermentation
    Check the lemonade daily. You'll know it's fermenting when you see tiny bubbles forming. Taste test after 48 hours - it should be slightly fizzy with a pleasant tangy flavor that's less sweet than when you started.
  6. Bottle and refrigerate
    Once the lemonade has reached your desired level of fermentation, strain out any solids (like ginger, mint, or kefir grains if using). Transfer to flip-top bottles or mason jars with tight-fitting lids. Refrigerate to slow down fermentation and build carbonation.
  7. Release pressure
    If using sealed bottles, "burp" them once daily by briefly opening the tops to release excess pressure. This prevents too much carbonation from building up and potentially causing the bottles to explode.
  8. Serve chilled
    After at least 24 hours in the refrigerator, your fermented lemonade is ready to serve. Pour over ice and garnish with fresh mint leaves or lemon slices if desired. The lemonade will keep refrigerated for up to 2 weeks, becoming more tart over time.
