  1. Prepare the potatoes
    Preheat your oven to 425°F (220°C). Wash the baby potatoes thoroughly and pat them dry. Cut them in half and place in a large mixing bowl.
  2. Season the potatoes
    Drizzle 3 tablespoons of olive oil over the potatoes. Add the garlic powder, salt, pepper, Italian herbs, and red pepper flakes (if using). Toss until all potatoes are evenly coated with the seasoning.
  3. Roast the potatoes
    Spread the seasoned potatoes in a single layer on a large baking sheet, cut side down. Roast in the preheated oven for 25 minutes until the bottoms are golden and crispy.
  4. Prepare the garlic Parmesan mixture
    While the potatoes are roasting, heat the remaining 1 tablespoon of olive oil in a small pan over medium-low heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned. Remove from heat and mix with the melted butter, 1/2 cup Parmesan cheese, and chopped parsley in a bowl.
  5. Finish with Parmesan
    Remove the potatoes from the oven. Drizzle the garlic Parmesan mixture over the hot potatoes and gently toss to coat. Return to the oven and bake for an additional 10 minutes until the cheese is melted and potatoes are golden brown and crispy.
  6. Serve
    Transfer the potatoes to a serving dish. Sprinkle with the remaining 1/4 cup of Parmesan cheese and additional fresh parsley. Serve hot as a delicious side dish.
