Ingredients
Instructions
-
Prepare the chickenPat the chicken breasts dry with paper towels. If they are very thick, pound them to an even thickness of about 3/4 inch. In a shallow dish, mix the flour, salt, and pepper. Dredge each chicken breast in the flour mixture, shaking off excess.
-
Sear the chickenHeat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown and nearly cooked through (internal temperature of about 155°F). Remove chicken to a plate and cover loosely with foil.
-
Make the garlic sauceIn the same skillet, reduce heat to medium and add the minced garlic. Cook for 30 seconds until fragrant, being careful not to burn it. Add the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pan.
-
Create the cream saucePour in the heavy cream and bring to a gentle simmer. Add the Italian seasoning and red pepper flakes if using. Allow the sauce to simmer for 3-4 minutes until it begins to thicken slightly.
-
Add the ParmesanReduce heat to low and gradually whisk in the grated Parmesan cheese until melted and the sauce is smooth. Taste and adjust seasoning if needed.
-
Finish the dishReturn the chicken to the skillet, spooning the sauce over the top. Allow to simmer gently for 2-3 minutes until the chicken is fully cooked (internal temperature of 165°F) and has absorbed some of the sauce flavors.
-
ServeSprinkle with fresh parsley before serving. Serve hot with pasta, rice, or vegetables of your choice, making sure to spoon extra sauce over each portion.
