  1. Cook the pasta
    Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente, usually 8-10 minutes. Reserve 1/4 cup of pasta water before draining.
  2. Prepare the chicken
    While pasta is cooking, season chicken strips with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes until golden brown and cooked through (internal temperature of 165°F). Remove from skillet and set aside.
  3. Make the Alfredo sauce
    In the same skillet, reduce heat to medium-low. Add minced garlic and sauté for 30 seconds until fragrant. Add butter and allow it to melt. Pour in heavy cream and bring to a gentle simmer. Cook for 3-4 minutes, stirring occasionally.
  4. Add cheese to sauce
    Gradually whisk in the grated Parmesan cheese until melted and the sauce is smooth. Season with salt, pepper, and nutmeg if using. If the sauce seems too thick, add some of the reserved pasta water to reach desired consistency.
  5. Combine pasta and sauce
    Add the drained pasta to the sauce and toss until the pasta is evenly coated. Add the cooked chicken back to the skillet and gently fold to combine with the pasta and sauce.
  6. Serve and garnish
    Transfer the Chicken Alfredo to serving plates. Garnish with freshly chopped parsley and additional grated Parmesan cheese if desired. Serve immediately while hot.
