  1. Prepare the base
    In a large bowl, mix the Greek yogurt with honey (or maple syrup) and vanilla extract until well combined and smooth. Taste and adjust sweetness if needed.
  2. Line the baking sheet
    Line a rimmed baking sheet with parchment paper. Pour the yogurt mixture onto the parchment paper and spread it evenly with a spatula to about 1/4-inch thickness.
  3. Add toppings
    Sprinkle the sliced strawberries, blueberries, raspberries, chopped pistachios, sliced almonds, shredded coconut, chocolate chips, and chia seeds evenly over the yogurt. Gently press the toppings into the yogurt to ensure they stick.
  4. Freeze the bark
    Place the baking sheet in the freezer for at least 4 hours or overnight until completely frozen solid.
  5. Break and serve
    Once frozen, remove from the freezer and let it sit at room temperature for 1-2 minutes. Use your hands to break the frozen yogurt into irregular bark-like pieces. Serve immediately or store in an airtight container with parchment paper between layers.
