  1. Prepare the yogurt mixture
    In a large bowl, combine the Greek yogurt, honey, lemon juice, vanilla extract, and sea salt. Whisk together until completely smooth and the honey is fully incorporated. Taste and adjust sweetness if needed.
  2. Fold in berries
    Gently fold in half of the fresh blueberries and strawberries, reserving the rest for topping later. Be careful not to overmix as you want to maintain some of the berry structure.
  3. Freeze the mixture
    Transfer the mixture to a shallow freezer-safe container. Cover with plastic wrap, pressing it directly onto the surface of the yogurt to prevent ice crystals from forming. Place in the freezer for 1 hour.
  4. Mix during freezing
    After 1 hour, remove from the freezer and vigorously stir the partially frozen yogurt with a fork or spatula to break up any ice crystals. Return to the freezer and repeat this process every 30 minutes for the next 2 hours, for a total of 4 times.
  5. Final freeze
    After the final stir, return to the freezer for a final hour until the yogurt reaches a scoopable consistency. If freezing overnight, let it sit at room temperature for 10-15 minutes before serving to soften slightly.
  6. Serve and garnish
    Scoop the frozen yogurt into serving bowls. Top with the remaining fresh berries, chopped pistachios, almond slivers, a drizzle of honey, and fresh mint leaves for garnish.
