  1. Prepare the Spam
    In a small bowl, mix the soy sauce and brown sugar until the sugar dissolves. Heat 1 teaspoon of vegetable oil in a non-stick skillet over medium heat. Add the Spam slices and cook for 2-3 minutes per side until golden and crispy. During the last minute, brush the glaze over the Spam slices. Transfer to a plate.
  2. Cook the eggs
    In the same skillet, add the remaining oil. Crack the eggs into the pan, keeping them separate. Cook sunny-side up or over-easy, depending on your preference, about 2-3 minutes. For over-easy, flip carefully and cook for an additional 30 seconds.
  3. Toast the bread
    While the eggs are cooking, lightly butter each slice of bread and toast in a separate pan or toaster until golden brown, about 2 minutes per side if using a pan.
  4. Assemble the sandwich
    Spread mayonnaise on one side of each slice of toasted bread. Place two slices of glazed Spam on one piece of bread. Top with a slice of cheese if using, then add the fried egg. Sprinkle with sliced green onions and close the sandwich with the second piece of bread. Repeat for the second sandwich.
  5. Serve hot
    Cut the sandwich diagonally if desired and serve immediately while the Spam is still crispy and the egg yolk is warm.
