  1. Prepare the Spam
    Heat a large non-stick skillet over medium heat. Place the Spam slices in the pan and fry for 2-3 minutes on each side until golden brown and slightly crispy. Remove from the pan and set aside.
  2. Make the Garlic Fried Rice (Sinangag)
    In the same skillet, add 1 tablespoon of oil and the butter. Once hot, add 4 cloves of minced garlic and sauté until fragrant and light golden brown, about 30 seconds. Add the cold rice, breaking up any clumps with a wooden spoon. Stir-fry for 3-4 minutes. Add the soy sauce, 1/2 teaspoon salt, and pepper, then continue cooking for another 2 minutes, stirring frequently. Transfer to a plate.
  3. Fry the Eggs (Itlog)
    Wipe the skillet clean and add the remaining tablespoon of oil over medium heat. Crack the eggs into the pan, keeping them separate. Sprinkle with remaining salt and cook to your preference - sunny side up is traditional, but over easy works well too. Cook until the whites are set but the yolks are still runny, about 2-3 minutes.
  4. Prepare the Dipping Sauce
    In a small bowl, combine the remaining 2 cloves of minced garlic, soy sauce, and rice vinegar (if using). Mix well and set aside.
  5. Assemble the Spamsilog
    Divide the garlic fried rice between plates. Arrange the fried Spam slices and fried eggs alongside the rice. Garnish with sliced tomatoes and cucumbers. Serve immediately with the dipping sauce on the side.
