  1. Prepare the chocolate
    Finely chop the dark chocolate into small pieces to ensure it melts evenly and completely. The smaller the pieces, the more quickly and smoothly they will melt into the milk mixture.
  2. Warm the dairy
    In a medium saucepan over medium-low heat, combine the milk and heavy cream. Heat gently until the mixture is steaming but not boiling, stirring occasionally to prevent a skin from forming on top.
  3. Create the base
    Whisk in the sugar, cocoa powder, espresso powder (if using), and salt until completely dissolved. Continue to heat, stirring constantly, until the mixture is hot but not simmering, about 2-3 minutes.
  4. Melt the chocolate
    Remove the saucepan from heat and add the chopped chocolate. Let it stand for 30 seconds, then whisk until the chocolate is completely melted and the mixture is smooth and glossy. Add the vanilla extract and whisk again.
  5. Finish and thicken
    Return the saucepan to low heat and cook for another 3-4 minutes, whisking constantly until the hot chocolate thickens slightly. It should coat the back of a spoon but still be pourable. Be careful not to let it boil.
  6. Serve immediately
    Pour the hot chocolate into warmed mugs or cups. Top with a dollop of whipped cream and a sprinkle of chocolate shavings if desired. French hot chocolate is traditionally served in small cups due to its richness and intensity.
