Prepare the chocolateFinely chop the dark chocolate into small pieces to ensure it melts evenly. Set aside in a bowl.

Create the cornstarch mixtureIn a small bowl, whisk together the cornstarch with 1/4 cup of the cold milk until completely smooth with no lumps. This will help thicken the hot chocolate to the signature Italian consistency.

Heat the milkIn a medium saucepan over medium heat, combine the remaining milk, cocoa powder, sugar, and salt. Whisk continuously until the sugar has dissolved and the mixture is hot but not boiling, about 3-4 minutes.

Thicken the mixtureWhile whisking constantly, slowly pour the cornstarch mixture into the hot milk. Continue cooking and stirring until the mixture begins to thicken, about 2 minutes.

Add the chocolateReduce heat to low and add the chopped chocolate. Stir continuously until the chocolate is completely melted and the mixture is smooth and thick enough to coat the back of a spoon, about 3-4 minutes. Add the vanilla extract and stir to combine.

ServeRemove from heat and pour immediately into warm mugs. If desired, top with whipped cream and chocolate shavings. For an aromatic touch, serve with a cinnamon stick as a stirrer.
