  1. Prepare the batter
    In a large mixing bowl, whisk the eggs until light and frothy. Gradually add milk and continue whisking. In a separate bowl, combine flour, sugar, and salt, then slowly add to the egg mixture, whisking until smooth. Stir in the vanilla extract, melted butter, and lemon zest if using. Let the batter rest for 10 minutes.
  2. Preheat your equipment
    Preheat your oven to 425°F (220°C). If making oven pancakes, place a 9x13-inch baking dish or a 12-inch cast iron skillet in the oven to heat up. If making stovetop pancakes (lettu), heat a non-stick skillet or crepe pan over medium heat.
  3. For oven pancakes (Pannukakku)
    Carefully remove the hot baking dish from the oven. Add 1 tablespoon of butter and swirl to coat the bottom and sides. Pour in the batter and return to the oven. Bake for 20-25 minutes until the pancake is puffed, golden brown around the edges, and set in the middle. The pancake will deflate slightly as it cools.
  4. For stovetop pancakes (Lettu)
    Lightly butter the hot skillet. Pour about 1/4 cup of batter into the pan, tilting quickly to spread the batter thinly. Cook until the bottom is golden brown (about 1-2 minutes), then flip and cook the other side for another minute. Repeat with the remaining batter, adding more butter to the pan as needed.
  5. Serve while hot
    For oven pancakes, cut into squares. For stovetop pancakes, fold or roll them. Serve immediately topped with fresh berries, a dusting of powdered sugar, and maple syrup or jam on the side.
