
Curried Lentil Soup
A warming, spiced soup with tender lentils and vegetables

Sauté the aromaticsHeat olive oil in a large pot over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and grated ginger, and cook for another minute until fragrant.

Add the spicesStir in the curry powder, ground cumin, and turmeric. Cook for 30 seconds to 1 minute, stirring constantly to toast the spices and release their flavors without burning.

Incorporate vegetables and lentilsAdd the rinsed lentils, diced carrots, and sweet potato to the pot. Stir to coat with the spice mixture, cooking for about 2 minutes.

Add liquids and simmerPour in the vegetable broth and diced tomatoes with their juice. Stir well, bring to a boil, then reduce heat to maintain a gentle simmer. Cover partially and cook for 25-30 minutes, until lentils and vegetables are tender.

Season and finishSeason with salt and pepper to taste. If the soup is too thick, add a little more broth or water to reach your desired consistency. For a creamier texture, use an immersion blender to partially purée the soup, leaving some chunks for texture.

Serve and garnishLadle the soup into bowls. Garnish with fresh cilantro leaves and serve with lemon wedges on the side for squeezing over the soup just before eating.
