  1. Prepare the bread
    Preheat the oven to 375°F (190°C). Arrange the bread slices in a single layer on a large baking sheet. Brush both sides of each slice with olive oil and season with salt and pepper.
  2. Toast the crostini
    Bake the bread slices for 8-10 minutes, flipping halfway through, until they're golden and crisp on both sides. Remove from the oven and immediately rub one side of each warm toast with the cut side of a garlic half for subtle flavor.
  3. Prepare tomato topping
    In a medium bowl, combine the diced tomatoes, minced garlic, 2 tablespoons olive oil, half of the sliced basil, salt, pepper, and red pepper flakes if using. Stir gently and let the mixture sit for at least 5 minutes to allow flavors to meld.
  4. Make cheese mixture
    In a separate bowl, mix the ricotta cheese, goat cheese, lemon zest, remaining basil, salt, and pepper until well combined and smooth. Set aside.
  5. Assemble and serve
    Spread each crostini with a generous layer of the cheese mixture, then top with a spoonful of the tomato mixture. Garnish with additional basil leaves, a drizzle of olive oil, and a sprinkle of sea salt. Serve immediately.
