Prepare the potatoesWash the potatoes thoroughly and slice them into 1/4-inch thick rounds. For faster cooking, you can parboil the potato slices in salted water for 5 minutes, then drain and pat dry. Alternatively, you can slice them and use them raw for a crispier texture.

Season the ingredientsIn a large bowl, combine the sliced potatoes, onions, and bell peppers. Sprinkle with paprika, garlic powder, onion powder, dried herbs, salt, and pepper. Toss until all pieces are evenly coated with the seasonings.

Heat the skilletHeat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Add the vegetable oil or bacon fat and allow it to get hot but not smoking.

Cook the potatoesAdd the seasoned potato mixture to the hot skillet in an even layer. Cook undisturbed for 5-7 minutes to allow the bottom layer to get crispy and golden brown.
