Cook the baconIn a large cast-iron skillet over medium heat, cook chopped bacon until crispy, about 5-7 minutes. Remove bacon with a slotted spoon and set aside, leaving the bacon grease in the skillet.
-
Sauté the aromaticsAdd diced onion to the bacon grease and cook until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 30 seconds until fragrant.
-
Crisp the potatoesAdd olive oil to the skillet along with partially cooked potatoes. Season with paprika, thyme, salt, and pepper. Spread in an even layer and cook undisturbed for 5-7 minutes until bottom side is golden brown. Flip potatoes and continue to cook for another 5-7 minutes until crispy on multiple sides.
-
Add the toppingsSprinkle the cooked bacon over the potatoes, then top with shredded cheddar cheese. Cover the skillet with a lid or aluminum foil and cook for 2-3 minutes until cheese is fully melted.
