  1. Prepare the potatoes
    Place cubed potatoes in a large microwave-safe bowl, cover with plastic wrap leaving one corner open for steam to escape, and microwave for 5-6 minutes until partially cooked but still firm. Drain and pat dry with paper towels.
  2. Cook the bacon
    In a large cast-iron skillet over medium heat, cook chopped bacon until crispy, about 5-7 minutes. Remove bacon with a slotted spoon and set aside, leaving the bacon grease in the skillet.
  3. Sauté the aromatics
    Add diced onion to the bacon grease and cook until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 30 seconds until fragrant.
  4. Crisp the potatoes
    Add olive oil to the skillet along with partially cooked potatoes. Season with paprika, thyme, salt, and pepper. Spread in an even layer and cook undisturbed for 5-7 minutes until bottom side is golden brown. Flip potatoes and continue to cook for another 5-7 minutes until crispy on multiple sides.
  5. Add the toppings
    Sprinkle the cooked bacon over the potatoes, then top with shredded cheddar cheese. Cover the skillet with a lid or aluminum foil and cook for 2-3 minutes until cheese is fully melted.
  6. Garnish and serve
    Remove from heat and top with dollops of sour cream and sliced green onions. Serve immediately from the skillet for a rustic presentation or transfer to a serving platter.
