  1. Prepare the eggs
    Crack the eggs into a medium bowl. Add the milk or cream, salt, and pepper. Whisk gently until just combined, being careful not to over-beat.
  2. Heat the pan
    Place a nonstick skillet over medium-low heat. Add the butter and allow it to melt completely, swirling to coat the bottom of the pan.
  3. Cook the eggs
    Pour the egg mixture into the pan. Let it sit undisturbed for about 15 seconds, then use a silicone spatula to gently push the eggs from the edges toward the center of the pan, creating large, soft curds.
  4. Finish cooking
    Continue gently folding the eggs as they set, keeping the heat low. Remove the pan from heat when the eggs are mostly set but still look slightly wet and glossy, as they will continue cooking from residual heat. This should take about 2-3 minutes total.
  5. Serve immediately
    Transfer the scrambled eggs to warmed plates. Sprinkle with fresh chives and parsley if using, and serve immediately with toast on the side.
