
Chipotle Beef Quesadillas
Smoky, cheesy flour tortillas filled with spicy beef

Cook the beef mixtureHeat 1 tablespoon of oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a wooden spoon, until browned and no longer pink, about 6-7 minutes. Drain excess fat if necessary.

Add aromatics and spicesAdd the diced onion to the beef and cook for 3-4 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant. Stir in the chopped chipotle peppers, adobo sauce, cumin, and oregano. Mix well and cook for 2 minutes. Season with salt to taste. Remove from heat and set aside.

Assemble the quesadillasPlace a tortilla on a clean work surface. Sprinkle about 1/3 cup of the shredded cheese over half of the tortilla. Add approximately 1/4 cup of the beef mixture on top of the cheese. Sprinkle some chopped cilantro and another layer of cheese (about 1/4 cup) on top. Fold the tortilla in half to create a half-moon shape.

Cook the quesadillasHeat the remaining tablespoon of oil in a large skillet or griddle over medium heat. Place the assembled quesadilla in the skillet and cook until golden brown and crispy on the bottom, about 2-3 minutes. Carefully flip and cook the other side until golden brown and the cheese is completely melted, about 2 minutes more.

Finish and serveTransfer the quesadilla to a cutting board and let it rest for 1 minute. Repeat with the remaining tortillas and filling. Slice each quesadilla into triangles using a sharp knife or pizza cutter. Serve hot with sour cream, pico de gallo or salsa, and lime wedges on the side.
