
Chilled Tofu with Ginger Soy Dressing
A refreshing Japanese appetizer with silky tofu and umami sauce

Prepare the tofuCarefully remove the tofu from its package and drain excess water. Gently place the tofu block on a clean kitchen towel or paper towels to absorb remaining moisture for about 5 minutes. Then, cut the tofu into 4 equal squares or rectangles.

Chill the tofuPlace the tofu pieces in individual serving dishes or on a single platter. Refrigerate for at least 10 minutes to ensure the tofu is properly chilled before serving.

Make the ginger soy dressingIn a small bowl, combine the soy sauce, rice vinegar, sesame oil, and grated ginger. Stir well to create a well-balanced dressing. If using chili oil or red pepper flakes, add them to the dressing and mix thoroughly.

Prepare the garnishesWhile the tofu is chilling, prepare your garnishes. Slice the green onions thinly on a diagonal. If using nori, cut it into thin strips or small pieces. Have your sesame seeds and bonito flakes ready for topping.

Assemble and serveRemove the chilled tofu from the refrigerator. Pour the ginger soy dressing evenly over each piece of tofu. Sprinkle with sliced green onions, toasted sesame seeds, nori strips (if using), and bonito flakes (if using). Serve immediately while still cold.
