Traditional Japanese hot tofu in kombu broth

Prepare the kombu brothPlace the kombu in a pot with 4 cups of water. Let it soak for about 30 minutes. Then heat the pot over medium-low heat. Remove the kombu just before the water begins to boil (boiling kombu can create a bitter taste).

Simmer the brothAdd the soy sauce and mirin to the kombu broth. Keep the broth at a gentle simmer, not a rolling boil.

Cook the tofuGently add the tofu cubes to the simmering broth. Be careful not to stir too much as the tofu is delicate and can break apart easily. Simmer for about 5-7 minutes until the tofu is heated through.

Prepare the garnishesWhile the tofu is simmering, prepare your garnishes. Place the sliced green onions, grated ginger, grated daikon, and bonito flakes (if using) in separate small dishes.

Serve the YudofuCarefully transfer the tofu to individual serving bowls, adding some of the hot broth. Allow each person to add their preferred garnishes to taste. For an extra flavor boost, drizzle with yuzu or lemon juice if desired.
