  1. Cook the noodles
    Bring a large pot of water to a boil. Add the udon noodles and cook according to package instructions, usually 8-10 minutes until tender but still firm. Drain thoroughly.
  2. Rinse and cool
    Immediately rinse the noodles under cold running water to stop the cooking process and remove excess starch. Continue rinsing until the noodles are completely cold. Drain well and transfer to a large bowl.
  3. Prepare the sesame sauce
    In a medium bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, tahini, ginger, and garlic until smooth and well combined. Taste and adjust seasoning if needed.
  4. Prepare the vegetables
    Julienne the cucumber and carrot into thin matchstick pieces. Slice the green onions diagonally. Set aside for assembly.
  5. Dress the noodles
    Pour the sesame sauce over the cooled noodles and toss gently until the noodles are evenly coated with the sauce. Let sit for 5 minutes to absorb the flavors.
  6. Assemble the dish
    Divide the dressed noodles among four serving bowls. Arrange the cucumber, carrot, and green onions on top of each serving.
  7. Garnish and serve
    Sprinkle each bowl with toasted sesame seeds and nori strips if using. Serve immediately or refrigerate for up to 1 hour before serving for an even chillier dish.
