Prepare the friesPreheat oven to 425°F (220°C). Toss the cut potatoes with 2 tablespoons of vegetable oil and spread them in a single layer on a baking sheet. Season with salt. Bake for 20-25 minutes, turning halfway through, until golden and crispy.

Make the chiliWhile the fries are baking, heat 1 tablespoon of oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 4 minutes. Add the garlic and cook for 30 seconds until fragrant.

Cook the beefAdd the ground beef to the skillet and break it up with a wooden spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

Season the chiliStir in the chili powder, cumin, and paprika. Cook for 1 minute to toast the spices. Add the diced tomatoes and kidney beans. Reduce heat to medium-low and simmer for 10 minutes, stirring occasionally.

Assemble the dishTransfer the baked fries to an oven-safe serving dish. Spoon the hot chili evenly over the fries. Sprinkle the shredded cheddar cheese over the top.

Melt the cheesePlace the dish under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Watch carefully to avoid burning.
