Create the flavor baseIn the same pot, sauté garlic, onions, and tomatoes until soft and fragrant, about 3-4 minutes. Add fish sauce and continue cooking for another minute to release the flavors.

Simmer the chickenReturn the chicken to the pot. Pour in tomato sauce and chicken broth. Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes or until chicken is tender.

Add root vegetablesAdd potatoes, carrots, and chayote to the pot. Continue to simmer for 15 minutes or until vegetables are half-cooked.

Incorporate plantainsAdd plantain chunks and continue cooking for another 5 minutes. The plantains add a subtle sweetness that balances the savory elements of the dish.

Add remaining vegetablesAdd cabbage, green beans, and bok choy. Cook for an additional 5-7 minutes or until all vegetables are tender but still firm. Be careful not to overcook the leafy greens.

Adjust seasoningTaste the broth and adjust seasoning with additional fish sauce or salt if needed. The broth should be flavorful and well-balanced with a slight tang from the tomatoes.

Serve hotRemove from heat and let stand for 5 minutes. Transfer to a large serving bowl, making sure to include all the colorful vegetables and chicken pieces. Serve hot with steamed rice on the side.
