
Cajun Shrimp Po' Boy
Classic New Orleans sandwich with spicy shrimp and remoulade

Prepare the remoulade sauceIn a small bowl, combine mayonnaise, Creole mustard, pickle relish, hot sauce, minced garlic, and lemon juice. Mix well and refrigerate until ready to use.

Season the shrimpIn a medium bowl, toss the shrimp with Cajun seasoning until evenly coated. Make sure each shrimp is well covered with the spice mixture.

Cook the shrimpHeat olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side until they turn pink and are cooked through. Remove from heat.

Toast the breadPreheat your oven to 350°F (175°C). Place the split baguettes or hoagie rolls cut side up on a baking sheet and toast in the oven for about 3-4 minutes until lightly golden and crisp.

Assemble the Po' BoysSpread a generous amount of remoulade sauce on both sides of the toasted bread. On the bottom half, layer shredded lettuce, tomato slices, red onion, and pickle slices.

Add shrimp and serveArrange the cooked Cajun shrimp evenly over the vegetables. Close the sandwich with the top half of the bread and press gently. Cut in half diagonally if desired and serve immediately.
