
Crispy Fish Tacos
Light and crispy beer-battered fish with zesty slaw and sauce

Prepare the fishPat the fish fillets dry with paper towels. Season with salt and set aside. In a bowl, whisk together flour, baking powder, salt, and cumin. Gradually add the cold beer, whisking until the batter is smooth with no lumps. Let the batter rest for 10 minutes.

Make the slawIn a medium bowl, combine the shredded cabbage, red onion, and cilantro. Toss with lime juice and a pinch of salt. Set aside to allow flavors to meld while you prepare the rest of the ingredients.

Prepare the sauceIn a small bowl, mix together the Mexican crema or sour cream, mayonnaise, and minced chipotle pepper. Season with salt to taste. If the sauce is too thick, thin with a little lime juice or water. Refrigerate until ready to serve.

Fry the fishHeat 1-2 inches of oil in a heavy-bottomed pot or deep skillet to 350°F (175°C). Dip fish pieces into the batter, allowing excess to drip off. Carefully place in hot oil and fry until golden brown and crispy, about 2-3 minutes per side. Work in batches to avoid overcrowding. Transfer to a paper towel-lined plate to drain.

Warm the tortillasHeat a dry skillet over medium heat. Warm tortillas for about 30 seconds on each side until soft and pliable. Keep warm by wrapping in a clean kitchen towel or aluminum foil.

Assemble the tacosPlace a portion of fried fish in each warm tortilla. Top with a generous amount of cabbage slaw and drizzle with the chipotle cream sauce. Garnish with additional cilantro and lime wedges if desired.
