  1. Prepare the fish
    In a medium bowl, toss the fish pieces with olive oil, taco seasoning, and cumin until evenly coated. Let marinate for 10 minutes while preparing other ingredients.
  2. Cook the fish
    Heat a large non-stick skillet over medium-high heat. Add the seasoned fish and cook for 3-4 minutes, turning occasionally, until fish is opaque and flakes easily with a fork. Remove from heat and set aside.
  3. Assemble the base
    Preheat oven to 375°F (190°C). Arrange tortilla chips in an even layer on a large, oven-safe platter or baking sheet. Sprinkle evenly with shredded Monterey Jack cheese.
  4. Bake the nachos
    Place the nachos in the preheated oven and bake for 5-7 minutes, or until the cheese is fully melted and bubbling around the edges.
  5. Add the toppings
    Remove nachos from the oven and immediately top with the cooked fish pieces, distributing them evenly. Sprinkle with shredded red cabbage, diced avocado, and pico de gallo.
  6. Finish and serve
    Drizzle Mexican crema or sour cream over the nachos. Garnish with sliced jalapeños and chopped cilantro. Serve immediately with lime wedges on the side for squeezing over the top.
