  1. Prepare the wings

  2. Create the Cajun dry rub
    In a small bowl, combine paprika, garlic powder, onion powder, dried oregano, dried thyme, cayenne pepper, black pepper, white pepper, and kosher salt. Mix thoroughly until all spices are well incorporated.
  3. Season the wings
    Drizzle the wings with vegetable oil and toss to coat evenly. Sprinkle the Cajun spice mixture over the wings and use your hands to massage the seasoning into the chicken, ensuring each wing is thoroughly coated.
  4. Arrange and chill
    Line a baking sheet with aluminum foil and arrange the seasoned wings in a single layer. For extra flavor development, refrigerate uncovered for at least 30 minutes or up to overnight.
  5. Preheat the oven
    Preheat your oven to 400°F (200°C). Position a rack in the middle of the oven for even heat distribution.
  6. Bake the wings
    Place the baking sheet with wings in the preheated oven and bake for 25 minutes. Then flip the wings and continue baking for another 20 minutes until they are golden brown and crispy, and the internal temperature reaches 165°F (74°C).
  7. Rest and serve
    Remove the wings from the oven and let them rest for 5 minutes. This helps the juices redistribute and maintains the wings' moisture. Transfer to a serving platter and serve hot with optional ranch or blue cheese dressing.
