  1. Prepare the spicy mayo
    In a small bowl, combine the mayonnaise and hot sauce. Mix well and refrigerate until ready to use.
  2. Make the quick slaw
    In a medium bowl, toss the coleslaw mix with apple cider vinegar and honey. Season with salt and pepper to taste. Set aside to let the flavors meld while preparing the fish.
  3. Season the fish
    Pat the fish fillets dry with paper towels. Sprinkle both sides generously with the Cajun blackening seasoning, pressing gently to adhere. Drizzle with lemon juice.
  4. Blacken the fish
    Heat the vegetable oil in a large cast-iron skillet over medium-high heat until almost smoking. Carefully place the fish fillets in the hot skillet and cook for 3-4 minutes per side, until the exterior is deeply browned and crisp, and the fish flakes easily with a fork.
  5. Toast the buns
    While the fish is cooking, lightly toast the brioche buns in a separate pan or under the broiler until golden brown.
  6. Assemble the sandwiches
    Spread the spicy mayo on both cut sides of each toasted bun. Place a lettuce leaf on the bottom half, followed by a blackened fish fillet. Top with a slice of tomato and a generous portion of the prepared coleslaw. Crown with the top bun.
