  1. Prepare the broth base
    In a large pot, bring the vegetable broth to a simmer over medium heat. Add the minced garlic and grated ginger, then simmer for 5 minutes to infuse the flavors.
  2. Add root vegetables
    Add the julienned carrots to the broth and simmer for 5 minutes until they begin to soften but still maintain some crunch.
  3. Incorporate mushrooms and tofu
    Gently add the sliced shiitake mushrooms and tofu cubes to the pot. Simmer for another 5 minutes, allowing the tofu to absorb the flavors of the broth.
  4. Add remaining vegetables
    Add the napa cabbage, snow peas, bamboo shoots, and water chestnuts to the pot. Continue to simmer for 5-7 minutes until all vegetables are tender-crisp.
  5. Season the soup
    Stir in the soy sauce and rice vinegar. Taste and adjust seasoning if necessary. Be mindful not to over-stir to keep the tofu and vegetables intact.
  6. Finish with sesame oil
    Just before serving, drizzle the sesame oil over the soup and give it one gentle stir to incorporate. The sesame oil adds a rich, aromatic finish to the soup.
  7. Serve and garnish
    Ladle the soup into bowls, ensuring each serving has a good variety of vegetables and tofu. Garnish with sliced green onions and serve immediately while hot.
