Prepare the broth baseIn a large pot, bring the vegetable broth to a simmer over medium heat. Add the minced garlic and grated ginger, then simmer for 5 minutes to infuse the flavors.

Add root vegetablesAdd the julienned carrots to the broth and simmer for 5 minutes until they begin to soften but still maintain some crunch.

Incorporate mushrooms and tofuGently add the sliced shiitake mushrooms and tofu cubes to the pot. Simmer for another 5 minutes, allowing the tofu to absorb the flavors of the broth.

Add remaining vegetablesAdd the napa cabbage, snow peas, bamboo shoots, and water chestnuts to the pot. Continue to simmer for 5-7 minutes until all vegetables are tender-crisp.

Season the soupStir in the soy sauce and rice vinegar. Taste and adjust seasoning if necessary. Be mindful not to over-stir to keep the tofu and vegetables intact.

Finish with sesame oilJust before serving, drizzle the sesame oil over the soup and give it one gentle stir to incorporate. The sesame oil adds a rich, aromatic finish to the soup.
