
Brisket Tacos
Tender slow-cooked beef in warm tortillas with fresh toppings

Season the brisketIn a small bowl, combine the chili powder, cumin, smoked paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper. Rub this mixture all over the brisket, ensuring it's well coated on all sides.

Sear the meatHeat olive oil in a large skillet or Dutch oven over medium-high heat. Add the brisket and sear on all sides until browned, about 3-4 minutes per side. Transfer the seared brisket to your slow cooker.

Prepare the cooking liquidIn the same skillet, add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another 30 seconds. Pour in the beef broth, scraping up any browned bits from the bottom of the pan. Add the fire-roasted tomatoes, chipotle peppers, and apple cider vinegar. Bring to a simmer.

Slow cook the brisketPour the hot liquid mixture over the brisket in the slow cooker. Cover and cook on low for 8 hours, or until the meat is very tender and easily shreds with a fork. For even more tender results, you can cook for up to 10 hours on low.

Shred the meatOnce the brisket is cooked, remove it from the slow cooker and place on a cutting board. Using two forks, shred the meat, discarding any large pieces of fat. Return the shredded meat to the slow cooker and mix it with the cooking liquid. Let it absorb the flavors for 15-20 minutes.

Reduce the sauce (optional)For a more concentrated flavor, transfer the cooking liquid to a saucepan and simmer until reduced by half. Then mix the shredded brisket back into this thickened sauce.

Assemble the tacosWarm the tortillas by wrapping them in damp paper towels and microwaving for 30 seconds, or by heating them individually in a dry skillet. Place a generous portion of the shredded brisket on each tortilla.

Add toppings and serveTop each taco with fresh cilantro, diced white onion, and a squeeze of lime juice. Serve immediately with additional lime wedges on the side. Optional toppings include sliced avocado, salsa, or a dollop of sour cream.
