  1. Prepare the potatoes
    Place diced potatoes in a pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook for 5-7 minutes until potatoes are just tender but not falling apart. Drain well and set aside.
  2. Cook the chorizo
    Heat vegetable oil in a large skillet over medium-high heat. Add the chorizo, breaking it up with a wooden spoon. Cook for about 5-7 minutes until the chorizo begins to brown and render its fat.
  3. Add aromatics
    Add the diced onion to the skillet with the chorizo and cook for 3-4 minutes until softened. Add the minced garlic, cumin, and oregano, stirring for another 30 seconds until fragrant.
  4. Combine with potatoes
    Add the par-boiled potatoes to the chorizo mixture. Cook for another 8-10 minutes, stirring occasionally, until potatoes are crispy on the outside and the flavors have melded together. Season with salt to taste.
  5. Warm tortillas
    While the mixture cooks, warm your corn tortillas. Either wrap them in a damp paper towel and microwave for 30 seconds, heat them in a dry skillet, or warm them directly over a gas flame for a few seconds per side.
  6. Assemble tacos
    Spoon the chorizo and potato mixture onto each warm tortilla. Top with crumbled cheese, fresh cilantro, and a squeeze of lime juice. Add hot sauce or salsa if desired.
