Combine with potatoesAdd the par-boiled potatoes to the chorizo mixture. Cook for another 8-10 minutes, stirring occasionally, until potatoes are crispy on the outside and the flavors have melded together. Season with salt to taste.

Warm tortillasWhile the mixture cooks, warm your corn tortillas. Either wrap them in a damp paper towel and microwave for 30 seconds, heat them in a dry skillet, or warm them directly over a gas flame for a few seconds per side.
