  1. Prepare the potatoes
    Heat olive oil in a large cast-iron skillet over medium-high heat. Add the diced potatoes, season with salt and pepper, and cook for about 10 minutes, stirring occasionally until they begin to soften and develop a golden crust.
  2. Add vegetables and sausage
    Add the diced onion and bell pepper to the skillet. Cook for 3-4 minutes until they begin to soften. Add the breakfast sausage, breaking it up with a wooden spoon, and cook until browned and no longer pink, about 5 minutes.
  3. Season the mixture
    Stir in the minced garlic, smoked paprika, and dried thyme. Cook for another minute until fragrant. Taste and adjust seasoning with salt and pepper as needed.
  4. Add the eggs
    Use the back of a spoon to create 6 wells in the mixture. Crack an egg into each well. Cover the skillet and reduce heat to medium-low. Cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
  5. Finish with cheese
    Sprinkle the shredded cheddar cheese over the entire skillet. Cover again for 1-2 minutes until the cheese has melted.
  6. Garnish and serve
    Remove from heat, garnish with sliced green onions, and serve immediately while hot. For family-style serving, bring the entire skillet to the table and let everyone help themselves.
