Breakfast Skillet
A hearty one-pan morning feast with eggs and potatoes
Ingredients
Instructions
-
Prepare the potatoesHeat olive oil in a large cast-iron skillet over medium-high heat. Add the diced potatoes, season with salt and pepper, and cook for about 10 minutes, stirring occasionally until they begin to soften and develop a golden crust.
-
Add vegetables and sausageAdd the diced onion and bell pepper to the skillet. Cook for 3-4 minutes until they begin to soften. Add the breakfast sausage, breaking it up with a wooden spoon, and cook until browned and no longer pink, about 5 minutes.
-
Season the mixtureStir in the minced garlic, smoked paprika, and dried thyme. Cook for another minute until fragrant. Taste and adjust seasoning with salt and pepper as needed.
-
Add the eggsUse the back of a spoon to create 6 wells in the mixture. Crack an egg into each well. Cover the skillet and reduce heat to medium-low. Cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
-
Finish with cheeseSprinkle the shredded cheddar cheese over the entire skillet. Cover again for 1-2 minutes until the cheese has melted.
-
Garnish and serveRemove from heat, garnish with sliced green onions, and serve immediately while hot. For family-style serving, bring the entire skillet to the table and let everyone help themselves.
