
Braised Tofu with Shiitake Mushrooms
Silky tofu in a rich, umami mushroom sauce

Prepare the tofuGently press the tofu cubes between paper towels to remove excess moisture. Heat 2 tablespoons oil in a large non-stick pan over medium-high heat. Add tofu cubes and pan-fry until golden brown on all sides, about 5-7 minutes. Remove tofu and set aside on a plate.

Cook the mushroomsIn the same pan, add the remaining tablespoon of oil. Add sliced shiitake mushrooms and cook until they release their moisture and begin to brown, about 4-5 minutes. Add minced garlic, julienned ginger, and white parts of green onions. Stir-fry for 1 minute until fragrant.

Create the sauceAdd soy sauce, dark soy sauce, shaoxing wine, sugar, and vegetable broth to the pan. Stir well to combine and bring to a simmer. Return the fried tofu to the pan and gently toss to coat with the sauce. Reduce heat to medium-low and cover. Simmer for 10 minutes, allowing the tofu to absorb the flavors.

Thicken and finishStir the cornstarch slurry to recombine, then slowly pour it into the pan while stirring. The sauce will begin to thicken. Continue to simmer uncovered for 2-3 minutes until the sauce reaches your desired consistency. Taste and adjust seasoning if needed.

ServeTransfer the braised tofu and mushrooms to a serving dish. Garnish with the reserved green parts of the green onions, sliced thinly. Serve hot with steamed rice.
