  1. Prepare the Cajun spice mix
    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper. Mix thoroughly until all spices are well incorporated.
  2. Prepare the salmon
    Pat the salmon fillets dry with paper towels. Brush each fillet with melted butter on both sides, ensuring they're evenly coated to help the spices stick and promote proper blackening.
  3. Season the fish
    Press the salmon fillets into the Cajun spice mixture, coating both sides generously. Ensure an even coating on all surfaces of the fish for consistent flavor and that characteristic blackened crust.
  4. Heat your cooking surface
    Heat a heavy cast-iron skillet over high heat until it's extremely hot, about 5 minutes. The pan must be very hot to achieve proper blackening without overcooking the fish. Add the vegetable oil to the hot skillet.
  5. Blacken the salmon
    Place the seasoned salmon fillets in the hot skillet, flesh side down. Cook for about 2-3 minutes until a dark crust forms. Flip carefully and cook skin side down for another 3-4 minutes, or until the fish is cooked through but still moist inside.
  6. Rest and serve
    Transfer the salmon to a plate and let rest for 2 minutes. Serve immediately with lemon wedges for squeezing over the fish. The exterior should be deeply colored and slightly charred while the interior remains tender and flaky.
