  1. Cook the rice
    In a medium saucepan, bring chicken broth to a boil. Add rice, reduce heat to low, cover and cook for about 18 minutes until tender and liquid is absorbed. Remove from heat and let stand, covered, for 5 minutes.
  2. Prepare the meat mixture
    In a large, heavy skillet or Dutch oven, heat oil over medium-high heat. Add ground pork and cook until browned, about 5 minutes. Add finely chopped chicken livers and cook for another 5 minutes, breaking up the meat with a wooden spoon.
  3. Add the trinity
    Add the onion, bell pepper, and celery (known as the Cajun 'trinity') to the skillet. Cook until vegetables are softened, about 5-7 minutes. Add garlic and cook for another minute until fragrant.
  4. Season the mixture
    Stir in Cajun seasoning, dried thyme, bay leaves, salt, and black pepper. Cook for 2 minutes to allow the spices to bloom and release their flavors.
  5. Combine rice and meat mixture
    Remove bay leaves. Add the cooked rice to the meat and vegetable mixture. Stir well to combine, ensuring the rice is evenly coated with the mixture, giving it the characteristic 'dirty' appearance.
  6. Finish and garnish
    Fold in fresh parsley and three-quarters of the green onions. Taste and adjust seasoning if necessary. Remove from heat and let stand for 5 minutes before serving.
  7. Serve
    Transfer to a serving dish and garnish with remaining green onions. Serve hot as a main dish or as a side with grilled meats or seafood.
