
Bibimbap Korean Rice Bowl

Cook the riceCook the short-grain rice according to package instructions, usually with a 1:1.2 ratio of rice to water. Once cooked, keep warm and set aside.

Prepare the vegetablesPrepare each vegetable separately. Lightly salt the zucchini and carrots to draw out moisture, then squeeze dry. Blanch spinach in boiling water for 30 seconds, then shock in ice water, squeeze out excess water and season with a little salt and sesame oil. Blanch bean sprouts for 2 minutes, drain and season with salt and sesame oil.

Sauté the vegetablesHeat 1 tablespoon of sesame oil in a pan. Sauté each vegetable separately until just tender but still crisp - about 2-3 minutes each for zucchini, carrots, and mushrooms. Season each lightly with salt and set aside.

Cook the beefIn the same pan, add 1 tablespoon of sesame oil and cook the beef over medium-high heat. Add 1 tablespoon of soy sauce and 1 teaspoon of sugar while cooking. Cook until browned and no longer pink, about 5-6 minutes. Set aside.

Fry the eggsWipe the pan clean and add the remaining sesame oil. Fry the eggs sunny-side up until whites are set but yolks are still runny, about 2-3 minutes.

Prepare the gochujang sauceIn a small bowl, mix together the gochujang, remaining soy sauce, sugar, 1 tablespoon of sesame oil, and 1 tablespoon of water until smooth. Adjust thickness with additional water if needed.

Assemble the bibimbapDivide the warm rice among four bowls. Arrange the vegetables and beef on top of the rice in separate sections, creating a colorful display. Place a fried egg in the center of each bowl.

Serve and mixDrizzle each bowl with gochujang sauce and sprinkle with sesame seeds and green onions. Serve immediately, instructing diners to mix everything together thoroughly before eating to combine all the flavors.
