
Beef and Cilantro Congee
Comforting rice porridge with tender beef and fresh herbs

Prepare the riceIn a large pot, combine the rinsed rice and chicken broth. Bring to a boil, then reduce heat to low. Simmer uncovered, stirring occasionally to prevent sticking, for about 1 hour until the rice breaks down and the congee becomes thick and creamy.

Marinate the beefWhile the congee is cooking, combine the sliced beef with 1 tablespoon soy sauce, 1 tablespoon oyster sauce, and 1 teaspoon sesame oil in a bowl. Mix well and let marinate for at least 15 minutes.

Cook the aromaticsHeat vegetable oil in a skillet over medium-high heat. Add the julienned ginger and minced garlic, cooking until fragrant, about 1 minute. Add the marinated beef and stir-fry until just cooked through, about 2-3 minutes. Remove from heat and set aside.

Finish the congeeWhen the congee has reached a creamy consistency, stir in the remaining tablespoon of soy sauce and white pepper. Adjust seasoning to taste, adding more soy sauce if needed.

Serve and garnishLadle the hot congee into bowls. Top each serving with the cooked beef, a generous amount of fresh cilantro, and sliced green onions. Serve immediately while hot.
