  1. Prepare the ingredients
    Slice the bananas lengthwise and set aside. Measure out all ingredients before beginning as this recipe moves quickly once started. Have ice cream ready in the freezer.
  2. Make the caramel sauce
    In a large, heavy skillet over medium heat, melt the butter. Add the brown sugar, cinnamon, and nutmeg. Stir until the sugar dissolves and the mixture begins to bubble, about 2-3 minutes.
  3. Cook the bananas
    Add the banana slices to the caramel sauce and cook for 1-2 minutes on each side until they begin to soften and brown. Spoon the sauce over the bananas as they cook.
  4. Prepare for flambé
    Remove the pan from the heat source. If using a gas stove, turn off any nearby burners. Pour the rum and banana liqueur (if using) over the bananas.
  5. Flambé the dessert
    Using a long match or lighter, carefully ignite the alcohol. Stand back as the flames may rise several inches. Let the flames die down naturally, which usually takes 30-45 seconds.
  6. Finish the sauce
    Once the flames subside, stir in the vanilla extract. The sauce should be slightly thickened and caramelized.
  7. Serve immediately
    Scoop vanilla ice cream into serving dishes. Spoon the warm bananas and sauce over the ice cream. Garnish with chopped toasted pecans if desired.
