  1. Prepare the cherries
    If using fresh cherries, wash, stem, and pit them. If using frozen cherries, thaw them completely and drain excess liquid.
  2. Create the cherry sauce
    In a large skillet over medium heat, combine the cherries, sugar, and water. Bring to a simmer and cook for about 5 minutes until the cherries begin to release their juices and the sugar dissolves completely.
  3. Thicken the sauce
    Add the cornstarch slurry, lemon juice, cinnamon, and salt to the cherry mixture. Stir continuously and cook for another 3-4 minutes until the sauce thickens to a syrup-like consistency.
  4. Flambé the cherries
    Remove the skillet from the heat source. Pour the kirsch or cherry brandy over the cherries. Using a long match or lighter, carefully ignite the alcohol. Allow the flames to subside naturally, which typically takes about 30 seconds. Never pour alcohol from the bottle directly into a hot pan or flames.
  5. Serve immediately
    Scoop vanilla ice cream into serving bowls. Spoon the warm cherry sauce over the ice cream. Garnish with lemon zest if desired, and serve immediately while the sauce is still warm.
