  1. Toast the pecans
    Place chopped pecans in a dry skillet over medium heat. Toast for 3-5 minutes, stirring frequently, until fragrant and lightly browned. Remove from heat and set aside.
  2. Prepare the base
    In a medium saucepan, combine brown sugar, heavy cream, butter, and salt. Bring to a gentle boil over medium heat, stirring constantly to prevent burning.
  3. Simmer the sauce
    Reduce heat to low and simmer for 5-7 minutes, stirring occasionally, until the sauce thickens slightly and coats the back of a spoon. Be careful not to overcook as it will continue to thicken as it cools.
  4. Add flavorings
    Remove from heat and stir in vanilla extract, bourbon (if using), and cinnamon. Mix until well incorporated.
  5. Incorporate pecans
    Fold in the toasted pecans, making sure they are evenly distributed throughout the sauce.
  6. Cool and serve
    Allow the sauce to cool for 5 minutes before serving. It will thicken as it cools. Serve warm over ice cream, bread pudding, pancakes, or other desserts.
