  1. Prepare the bananas
    Peel ripe bananas and slice them diagonally into 1/2-inch thick pieces. If bananas are very ripe, place them in the refrigerator for 30 minutes to firm up slightly for easier handling.
  2. Make the batter
    In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt. In a separate bowl, combine the egg, milk, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, whisking until you have a smooth batter with no lumps.
  3. Heat the oil
    In a deep skillet or Dutch oven, heat vegetable oil to 350°F (175°C). Use a cooking thermometer to ensure the oil maintains this temperature throughout the frying process.
  4. Coat and fry the bananas
    Dip banana slices into the batter, allowing excess to drip off, then carefully place them in the hot oil. Work in small batches to avoid overcrowding, which would lower the oil temperature. Fry for 2-3 minutes per side until golden brown and crispy.
  5. Drain and cool
    Use a slotted spoon to remove the fritters from the oil and transfer to a plate lined with paper towels to absorb excess oil. Allow them to cool slightly for 1-2 minutes.
  6. Finish and serve
    Dust the fritters with powdered sugar while still warm. Arrange on a serving plate and drizzle with honey or maple syrup if desired. Serve immediately while still warm and crispy.
