
Fried Plantains
Sweet, crispy plantain slices with a caramelized exterior

Prepare the plantainsCut off both ends of each plantain. Make a shallow slit along the length of each plantain and peel off the skin. Slice the plantains diagonally into 1/2-inch thick pieces.

Heat the oilIn a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking, around 350°F (175°C).

Fry the plantainsWorking in batches to avoid overcrowding, add the plantain slices to the hot oil. Fry for 2-3 minutes on each side until they turn golden brown and caramelize around the edges. If using spices, mix the brown sugar, cinnamon, and nutmeg in a small bowl.

Drain and seasonUsing a slotted spoon, transfer the fried plantains to a plate lined with paper towels to drain excess oil. While still hot, sprinkle with salt and the optional spice mixture if desired.

ServeTransfer the fried plantains to a serving dish. Garnish with chopped cilantro if using, and serve warm with lime wedges on the side for squeezing over the plantains.
