  1. Prepare the plantains
    Cut off both ends of each plantain. Make a shallow slit along the length of each plantain and peel off the skin. Slice the plantains diagonally into 1/2-inch thick pieces.
  2. Heat the oil
    In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking, around 350°F (175°C).
  3. Fry the plantains
    Working in batches to avoid overcrowding, add the plantain slices to the hot oil. Fry for 2-3 minutes on each side until they turn golden brown and caramelize around the edges. If using spices, mix the brown sugar, cinnamon, and nutmeg in a small bowl.
  4. Drain and season
    Using a slotted spoon, transfer the fried plantains to a plate lined with paper towels to drain excess oil. While still hot, sprinkle with salt and the optional spice mixture if desired.
  5. Serve
    Transfer the fried plantains to a serving dish. Garnish with chopped cilantro if using, and serve warm with lime wedges on the side for squeezing over the plantains.
