    Peel the jicamas and cut them into french fry shapes, about 1/4 inch thick and 3-4 inches long. Try to make them as uniform as possible to ensure even cooking.
  2. Boil the jicama
    Bring a large pot of water to a boil. Add the jicama sticks and boil for 10 minutes. This step helps to soften the jicama slightly before baking. Drain thoroughly and pat dry with paper towels.
  3. Season the fries
    Preheat your oven to 425°F (220°C). In a large bowl, toss the jicama sticks with olive oil, garlic powder, paprika, cumin, chili powder, cayenne (if using), salt, and black pepper until evenly coated.
  4. Arrange for baking
    Spread the seasoned jicama in a single layer on one or two large baking sheets lined with parchment paper. Make sure they're not overlapping to ensure maximum crispiness.
  5. Bake to crispy perfection
    Bake for 30-40 minutes, flipping the fries halfway through cooking time. The fries should be golden brown and crispy on the outside but still slightly tender inside.
  6. Finish with lime
    Remove from the oven and immediately sprinkle with fresh lime juice while still hot. This adds a bright, acidic flavor that complements the jicama perfectly.
  7. Serve and garnish
