  1. Prepare the avocados
    Select firm but ripe avocados. Cut each avocado in half, remove the pit, peel, and slice each half into 4 wedges, for a total of 8 wedges per avocado. Pat dry with paper towels to remove excess moisture.
  2. Set up breading station
    Prepare three shallow dishes: one with flour, one with beaten eggs, and one with panko breadcrumbs mixed with garlic powder, smoked paprika, salt, and pepper. Arrange them in that order for an efficient breading process.
  3. Bread the avocado slices
    Working with one avocado wedge at a time, dredge in flour, shaking off excess. Dip into beaten egg, allowing extra egg to drip off. Finally, coat thoroughly in the seasoned panko mixture, pressing gently to adhere. Place on a plate and repeat with remaining wedges.
  4. Preheat and prepare
    Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and spray with cooking spray or brush with olive oil. Arrange the breaded avocado wedges in a single layer, not touching each other.
  5. Bake to perfection
    Spray or drizzle the avocado wedges lightly with oil. Bake for 15-20 minutes, flipping halfway through, until the coating is golden brown and crispy. For extra crispiness, broil for the final 1-2 minutes, watching carefully to prevent burning.
  6. Prepare the dipping sauce
    While the avocado fries are baking, combine Greek yogurt, lime juice, and chopped cilantro in a small bowl. Season with a pinch of salt and pepper to taste. Stir well and refrigerate until ready to serve.
  7. Serve immediately
    Remove avocado fries from the oven and sprinkle with a little extra sea salt while still hot. Transfer to a serving plate and serve immediately with the yogurt-lime dipping sauce on the side.
