  1. Prepare the baking dish
    Grease a 9x13-inch baking dish with butter or cooking spray. Preheat your oven to 350°F (175°C).
  2. Sauté the vegetables
    In a medium skillet over medium heat, sauté the diced onions and bell peppers until softened, about 5 minutes. Add minced garlic and cook for another 30 seconds until fragrant. Remove from heat and set aside.
  3. Prepare the egg mixture
    In a large bowl, whisk together eggs, milk, salt, black pepper, dried thyme, and cayenne pepper (if using) until well combined.
  4. Assemble the casserole
    Spread the cubed bread evenly in the prepared baking dish. Layer with the sautéed vegetables, crumbled bacon, and 1 1/2 cups of the shredded cheese. Pour the egg mixture evenly over everything, pressing down gently to ensure all bread is soaked.
  5. Add final touches
    Sprinkle the remaining 1/2 cup of cheese on top of the casserole. Cover with aluminum foil.
  6. Bake the casserole
    Bake covered for 30 minutes, then remove the foil and bake for an additional 15 minutes until the top is golden brown and the center is set.
  7. Rest and serve
