  1. Prepare the vegetables
    In a large bowl, combine the sliced Napa cabbage, red cabbage, julienned carrot, red bell pepper, and green onions. Toss gently to mix all vegetables evenly.
  2. Make the dressing
    In a small bowl, whisk together the rice vinegar, toasted sesame oil, soy sauce, honey, grated ginger, and minced garlic until well combined and slightly emulsified.
  3. Dress the slaw
    Pour the dressing over the vegetable mixture and toss thoroughly to coat all ingredients evenly. For best flavor, allow the slaw to marinate in the refrigerator for at least 15 minutes before serving.
  4. Add finishing touches
    Just before serving, add the chopped cilantro, toasted sliced almonds, and sesame seeds to the slaw. Toss gently one final time to incorporate all ingredients.
