  1. Prepare the mangoes
    Peel the green mangoes and julienne them into thin strips using a sharp knife or a mandoline. Place the julienned mango in a large mixing bowl.
  2. Combine the vegetables
    Add the julienned carrots, chopped cilantro, torn mint leaves, and halved cherry tomatoes to the bowl with the mangoes. Toss gently to combine.
  3. Make the dressing
    In a small bowl, whisk together the fish sauce, lime juice, palm sugar, minced garlic, and chopped chilies until the sugar dissolves. Adjust the seasoning to balance the sweet, sour, and spicy flavors according to your preference.
  4. Dress the salad
    Pour the dressing over the mango mixture and toss thoroughly to coat all ingredients evenly. Let it sit for about 5 minutes to allow the flavors to meld together.
  5. Add the final touches
    Sprinkle the chopped peanuts and dried shrimp (if using) over the salad. Gently toss once more to incorporate these ingredients throughout the salad.
  6. Serve and enjoy
